Bestrijk de stukken vlees met dit mengsel. <\/li>\n<li><strong>Bereid de groenten voor:<\/strong> Schil de groenten en maak ze schoon. Snijd ze in gelijke stukken voor een gelijkmatige garing. <\/li>\n<\/ol>\n<h3>Koken<\/h3>\n<ol>\n<li><strong>Bak het vlees:<\/strong> Bak in een braadpan het vlees met de ui en wortel in een beetje vet. Voeg de tomatenpuree, tijm, laurier en een beetje witte wijn toe. Giet de resterende wijn en het water erbij en roer. Breng aan de kook, dek af en gaar in de oven op 150\u00b0C gedurende minstens 4 uur (2 uur voor dunne stukken).   <\/li>\n<li><strong>Laat de saus inkoken:<\/strong> Verwijder het vlees zodra het gaar is en zeef het sap. Ontvet en laat inkoken tot het ingedikt is. Doe het vlees terug in het sap.  <\/li>\n<li><strong>Bereid de puree:<\/strong> Kook elke groente apart in water en een beetje melk. Giet na het koken af en pureer met een beetje kookvocht.
